Specialty foods, such as low fat and low calorie foods can be utterly expensive. On my journey towards a slimmer self, I try to eat 6 small meals each day. Here are a couple of quick, easy, and frugal recipes that I eat for mid-morning or mid-afternoon snacks.
I prepare rice as directed on package, smallest directions are for two servings. I stir in a can of cream of broccoli soup. With a little help from my spice rack, I have a tasty and filling meal that is only 270 calories and I have TWO servings for under $3.
I make a cup of beef bouillon and substitute it for the water when preparing instant mashed potatoes. I save calories by leaving out the butter that the directions on the mashed potatoes calls for. After fixing the mashed potatoes, I stir in a can of cream of mushroom soup and make a trip to my spice racks to add onion or garlic powder and whatever else I may be in the mood for. Again, I have TWO servings that cost under $3 to make and each serving is only 255 calories.
I cannot stress how important kitchen spice racks are to adding flavor to a meal without adding a lot of calories to your diet or cost to your meals.
